Avocado Toast with Egg & Blueberries

What do you like to make for breakfast? One of my absolute favorite things to make is avocado toast with a sunny side up egg. The key for my toast is the yoke must be runny! I love sopping up the yoke with the bread! YUUUUUMMM just thinking about it! Making avocado toast with a side of fruit is not only quick but super healthy.

Avocados are high in monounsaturated fats which are the good fats. This heart healthy nutrient dense fruit contains many vitamins and minerals. I cant wait to mush up some avocados and serve to Juicy man (my son).

I can never eat just one piece so I always make two! You can make it a million ways but I keep mine simple: eggs, avocado, and toast. Add salt and pepper to taste then boom! Done! Avocado toast is filling but I need more! As a side I added some delicious grits and for a bit more nutrition I added natures best antioxidant blueberries. Not to mention the blueberries add beautiful color to the plate!

Avocado Toast with Sunny Side Up Eggs & Blueberries

Avocado Toast is an easy, healthy, and delicious breakfast. Make it fun and colorful. I added blueberries and grits for a side.

  • 2 Eggs
  • 1 Rippened Avocado
  • 2 Slices of Bread
  • Salt & Pepper to taste
  1. Preheat small skillet. Add cooking spray or butter to pan.

  2. Crack eggs directly into skillet. Let cook to your desired consistency.

  3. While eggs are cooking put bread in the toaster. After it's done add butter if you like.  

  4. If you like more avocado cut it in half and take out the pit. Use one side of avocado for each slice of bread. If you do not like a lot of avocado use one side of the avocado for both pieces of bread and store the rest in the refrigerator. 

  5. This step is optional but you can add a little salt and pepper on top of the avocado.

  6. Once the eggs are done and the avocado is on the toast, simply slide the egg on top of the toast and avocado.

  7. Add salt and pepper to taste.
